Goats cheese mousse with textures of beetroot and a Parmesan tuile
Pan seared scallops with roasted cauliflower, raisins and pancetta
“Tasting of salmon”: tartare; smoked; pan fried; and mousse; served with cucumber, cream cheese and horseradish
   
Passionfruit sorbet with roasted pineapple granita

“A tasting of Derbyshire beef”: Fillet; cheek; and oxtail; served with fondant potato and a red wine jus
Roasted loin of cod with smoked mash, artichoke purée, roast salsify and chicken jus
Roasted rump of lamb with braised lamb shoulder, Dauphinoise potatoes and creamed savoy cabbage
Butternut squash risotto with goats cheese croquette and pumpkin oil

Rhubarb, ginger and white chocolate mille-feuille with rhubarb sorbet
Warm apple compote with oat crumb, compressed apple and lemon crème fraiche sorbet
Dark chocolate delice with hazelnut ice cream
